The oven

One dome of brick, fired with Idaho red fir.

It weighs more than the truck that delivered it, takes an hour to come to temperature, and does one thing. We built the menu around what it does well and left off what it does not.

  • 72 hrsThe dough rests cold for three days before it is stretched. That is where the flavour and the blisters come from.
  • 900°FFloor temperature at service. The fire stays lit on the left side of the dome the whole night.
  • 90 secA pizza goes in, gets turned twice, and comes out. Nobody sets a timer; you can hear when it is done.

What you are eating

Four ingredients in the dough. Not many more on top.

Double-zero flour, water, sea salt, and a little of yesterday's dough as the starter. The toppings are there to be tasted, so there are few of them and none from a can.

The spots are the point. A Neapolitan crust is soft in the middle and charred at the rim. If yours is not, tell us and we will make another.

Good to know

The questions people ask before they come.

Do you take reservations?

No. Thirty-two seats, first come. On a Friday the wait at 6pm is usually under twenty minutes, and you can put your name down and walk to the park.

Do you deliver?

No, and we are not going to. Pickup is the whole menu, ready twenty minutes after you call, and it is still hot when you get home if home is in Boise.

Gluten-free?

On Sundays. A gluten-free crust from a bakery down the street, on any pizza, for two dollars more. The oven is shared, so it is not for celiac diets.

Kids?

Yes. A small margherita is eight dollars, and there are crayons. Highchairs are by the door; ask for one.

Big groups?

Eight or more, call ahead the same day and we will push tables together. Twenty or more, email us about closing the room on a Tuesday.

What is the wait for pickup on a Saturday?

Longer. Twenty-five to thirty-five minutes between six and eight. Call before you leave the house, not from the parking lot.

Parking

Street parking on 12th is free after 6pm. The lot behind the building is ours; four spaces, ten-minute limit for pickup.
